Cheeseburger Sliders

Cheeseburger Sliders
A great way to feed a crowd!
I tripled this recipe because
I was feeding a lot of people.

1 pound of ground beef 
2 tsp. Salt
2 Tsp. Pepper
2 Tsp. Garlic Powder
Melted Butter
Sliced Cheddar Cheese
 1 Pack of King's Hawaiian Rolls
Onions (Optional)
Any Condiments that you like after they are baked.

Take your ground beef and  press in to a 9 x 13 pan
after mixing Salt, Pepper and garlic powder with it.
I just mix with my hands.
Bake for 20 minutes on 350.
Drain.

Split rolls in half.

Place big rectangle Meat patty on top of bottom part of rolls.
Now is the time to add onions if you desire.
As you can see, I am the only one that likes onions.
He doesn't know what he's missing.
(Smile)


Then add real cheddar cheese slices.
(Don't get the imitation!)

Place tops on Meat and brush with melted butter.
I added garlic powder and if I had had sesame seeds I would
have added them.
Bake 350 for 20 minutes.

Cut and serve.

Now's the time to add any condiments you want on yours!

Add a Coke and it will be perfect!

Peanut Butter Cake

This is a very easy cake!
The picture isn't that great but it was very good.

Ingredients:
2 Cups of All purpose flour.
2 cups of sugar.
1/2 tsp. baking soda.
1 tsp. salt
1 cup of butter
1 cup of water
1/4 cup creamy peanut butter
2 beaten eggs
1 tsp. vanilla extract
1/2 cup of buttermilk
Preheat oven to 350.
Grease pan.
In a large bowl, mix together the flour, sugar, salt and backing soda
In a saucepan, melt together the butter, water and peanut better over medium heat and bring to a boil.
Pour the butter mixture of the dry ingredients and mix until well combined.
In a separate bowl, mix together the eggs, vanilla and buttermilk then add to the batter.
Spread the batter in the pan and bake for 25-28 minutes.

Icing
1/2 cup butter
1/4 cup creamy peanut butter
1/3 cup plus 1 tbsp. of milk
1 (16 oz.) package of powdered sugar
1 tsp. vanilla extract
Melt the butter, peanut butter and milk in a saucepan over medium heat and bring to a boil.
Turn off the heat and mix in powdered sugar and vanilla until well combined.
Spread icing over the cake while it's still warm.

Baked Potato Soup

This soup is a copy cat of a soup from Houston's restaurant in Atlanta!
We made it up ourselves.
(By the way, that's my all time favorite restaurant! We go once a year for my birthday!)

I start out with butter......yes always butter!
Then I add finely diced onions.
Sometimes I do carrots chopped finely.
Then I add water and potatoes.
Cook until done and fix just like mashed potatoes.
Add more butter.
Salt and pepper to taste.

You want this very thick.
Serve with shredded cheddar cheese, bacon, and chives!
Absolutely delicious!
I usually serve with cornbread
but I fixed homemade bread this time.

Dutch Oven Crusty Bread


This is probably the easiest bread I make!
Only 4 ingredients!



This is actually a no knead bread,
although I do knead a little to make it into a ball.
You don't even grease the pan!
The hardest part to me is remembering to do mix this
bread up for it to rise the night before.
It literally takes 5 minutes to do though.
Easy.

This bread is easy & delicious!

3 Cups Bread Flour
1 Tsp. Active Dry Yeast
1 1/2 Tsp. Salt
1 1/2 Cups warm water

Whisk flour, yeast and salt in a 3-4 quart bowl with a tight fitting lid. I like to use my trusty Tupperware. If you don't have a bowl w/lid use plastic wrap on a bowl. Add the water and stir with a wooden spoon until the dough is mixed well. The dough will be quite sticky and shaggy looking, but that's OK. Cover the bowl and set aside for 12-18 hours,(up to 24) overnight is fine.


Preheat oven to 450 degrees. Place a cast iron Dutch oven with the lid into the oven while preheating and heat the pot/lid for 30 minutes. Meanwhile, scrape the risen dough from the bowl onto a heavily floured surface. (Dough will still be very sticky.) With floured hands, gently shape the dough into a round loaf, making sure there's enough flour on the surface so dough doesn't stick. let the dough just sit there until you're pot is preheated.

Take the hot pot from the oven and gently place the dough into the pot. Cover with the lid and return to the oven and bake for 30 minutes. Remove the lid at that time and return the pot to the oven for another 10-15 minutes. Gently shake the loaf onto a cooling rack and enjoy the beautiful aroma. Give it a chance to cool before cutting into loaf.

Oven Fried Chicken


Crush Corn Flakes and melt butter.

I don't normally use the boneless chicken breast
but its all I had in the freezer
and I am shopping in my pantry,
garden and freezer for a few weeks,
so this is it.

Dip in butter and roll in crushed cornflakes.
Salt and pepper.
Then dip in butter again and roll in cornflakes again.

Spray pan or grease. Then add chicken.
Don't worry if the chicken has bare spots like this one
but you do want it covered as good as you can.

Then you take your leftover butter
and it will have cornflakes in it
and pour over chicken.
This is why I said not to worry.


Place in a preheated 400 degree oven for about 40 minutes.
If it browns too quickly, cover with foil while cooking.

This is an easy and delicious way to fix chicken.
I am trying to learn to cook smaller portions,
since it is just the two of us most of the time.
That's harder to do than you think.

White Chocolate Cream Cheese Icing


















8oz Cream Cheese
1 stick of butter
16 oz of powdered sugar
1 t vanilla flavor
1/2 cup melted white chocolate
Mix softened butter and cream cheese in mixer.
Add vanilla flavoring.
If you stop here it will be a cream cheese icing
but if you want to add the melted white chocolate, it changes the taste completely.
If it is too thick you can add a little milk.  Very little.

Strawberry Cake

This is a delicious strawberry cake that I make from scratch.
It is delicious.
I used to make this for my "Mother in Love" and she would make the icing.
I used a White chocolate cream cheese icing and will share the recipe in my next post.
Grease and flour your pans first and preheat oven to 350*
Ingredients
  2 Cups Sugar
1 3 oz. pkg. strawberry Jello
1 cup butter, softened
4 eggs (room temperature)
2 3/4 cups sifted cake flour
2 1/2 teaspoons baking powder
1 cup whole milk
1 tbsp. vanilla flavoring
1/2 cup strawberry puree made from frozen sweetened strawberries


Combine the flour and baking powder.

 In a large bowl, cream together the butter, sugar and
dry strawberry gelatin until light and fluffy

Beat in eggs one at a time, mixing well after each.

Stir flour mixture in to the batter
alternately with the milk  and
Blend in vanilla and strawberry puree.

Divide the batter evenly between the prepared pans

Kathy's Spaghetti

I honestly can't tell you how good this spaghetti is!!
Thank you Kathy!
This is actually her Moms and Aunts recipe but she shared with me!
1 lb. ground beef
1 medium onion
3 Cans (8 oz.) Tomato Sauce
2 (6 oz.) Tomato Paste
1 (14 oz.) Diced Tomatoes
1/4 box oregano
Salt & Pepper
Brown ground beef & onions.
Add everything else and simmer for 2 hours.
Serve & Enjoy!
