The Best Squash Casserole

 This is my absolute favorite squash casserole recipe!

3 Cups sliced squash

1 can cream of mushroom soup

2 teaspoons grated onion

1 cup grated sharp cheese

Salt and pepper taste

1/3 cup melted butter or margarine

1/2 cup bread crumbs

2 eggs beaten

For Topping mix:1/4 cup bread crumbs and 1-2 teaspoons of butter or margarine.

Cook Squash in a small amount of water until tender.  Mash. Add all ingredients except topping.  Mix well and pour into a greased baking dish. Sprinkle with topping and bake 425*F. for 20 minutes.

Breakfast Casserole

Breakfast Casserole

 Ingredients:

1 lb sausage

Add frozen hash browns (thawed)

(Or 1 potato  sliced thin.) 

6 eggs beaten. 

Cream of mushroom soup. 

Onion. To taste. 

1/2 tsp dry mustard

3/4 cup evaporated milk

2 cups of shredded cheese  

Cook sausage and potatoes and add onions and dry mustard.

Add cream of mushroom soup, evaporated milk and cheese to beaten eggs.  Add Salt & Pepper to taste  

Pour meat and potatoes in casserole dish.   

Pour egg mixture on top.  Then cover. place on refrigerator at least 1 hour but up to overnight  

Bake in preheated oven 350 degrees for 40-45 minutes or until set. Serve while hot.

Sausage Balls




 1 lb. mild sausage. 

1 lb. hot sausage. 

2 lbs of shredded cheese

6 cups of Bisquick or your own baking mix. 

Mix together well. Form in balls the size of golf balls. Bake in preheated oven 300 degrees for 25-30 minutes. 

Enjoy!!

 This recipe came from an old Church cookbook. It is not the hard brunswick stew people used to make when they killed hogs but if you want an easy meal to put on the table that will feed a crowd or just your family, this is delish.  It is easy and quick!

Canning Green Beans

 So. I don't like to can in the summer anymore so this is me, canning green beans from my garden, that I froze in the heat of the summer!

It is fall and cooler weather and I love doing it now!

But you know what? 

If you don't get to it, they are fine in the freezer.

I just need the freezer space and love having canned goods on my shelf.

Hope this helps somebody.

Beef Enchiladas




Sauce:

2-3 tablespoons of oil.

2 tablespoons of All Purpose Flour

1 28 oz. can Enchilada Red Sauce

2 Cups Chicken Broth

Salt & Pepper to taste

Cilantro (Optional)

Meat:

1 -1/2 lb Ground beef, turkey, deer meat (your choice)

1 medium onion (chopped)

Salt to taste

Tortillas:

10-12 whole corn tortillas (We prefer flour)

Oil

Items needed to put together:

2-3 cups of shredded cheese

1/2 cup black olives

1 small can of mild chilis

Directions:

The Sauce:

In Saucepan, add oil and flour to make a roux. Whisk togeteher. Heat until thickened but don't burn. Pour in chicken broth, enchilada sauce, salt, Pepper and cilantro (Optional). Bring to a boil. Reduce heat and simmer around 20-30 minutes stirring every so often.

The Meat:

Brown the onions and meat in a skillet. Drain. 

Tortillas:

Heat oil in small skillet over medium heat. One at a time, heat through but not crisp maybe 15-20 seconds each turning.  Remove and drain on paper towels.



Putting together:

Pour sauce in to bottom of baking dish.

Dip each tortilla in to sauce. Add meat and cheese and mild chilis. Roll up, seam side down. Place in to baking dish in to sauce. Fill up baking dish. Sprinkle with cheese covering enchiladas. Add any meat or chilis on top along with sliced black olives.

Bake in a 350 preheated oven for 20-25 minutes or until bubbly hot and cheese melted.
