Japanese Fruit Pie


I thought I would share this delicious pie with you. My mother shared this recipe with me several years ago. I make it a lot at Christmas, but it is good anytime. It is so simple to make. I like to keep one in the freezer for unexpected guests or for special times when I need to take food to someone. My "Sweet Hunter" does not like coconut, but he loves this pie. I hope you enjoy it as much as we do!



Japanese Fruit Pie

2 Sticks Butter
2 Cups Sugar
2 Tbsp. Vinegar
4 Eggs
1 Cup Raisins
1 Cup Pecans
1Cup Coconut

Melt butter & add other ingredients. Fold into 2 uncooked pie shells. Bake 300 degrees for 35 minutes.

Great recipe! I hope others try this one, it is the easiest and best pie I have ever done! And, it makes 2, one to keep and one to give away!
